Now you can have your cake and eat it too with our birthday cupcake mix! Our vanilla cupcake will have you singing Happy Birthday in no time! Just add non dairy milk, oil, vanilla and bake!

Yields: 12 regular size cupcakes or 1 8 inch round cake.

What else you'll need

  • 3/4 c unsweetened
 almond milk
 or coconut milk (hot)
  • 2/3 c canola oil or
 coconut oil (melted)
  • 1 tbsp vanilla extract
  • a whisk
  • For best results, do not substitute ingredients.

Preparation Instructions

  1. Heat oven to 350°F (internal temperature).
  2. Whisk dry mix, 3/4 c unsweetened almond milk or coconut milk , 2/3 c canola oil and 1 tbsp vanilla in a large bowl until all ingredients are thoroughly combined.
  3. Immediately divide batter evenly among 12 cupcake liners, filling each until about two-thirds full or pour batter into an 8-inch metal pan that has been sprayed with non-stick spray and lined with parchment paper.
  4. Bake for 19-24 minutes (cupcakes) or 27-33 minutes (cake) or until toothpick inserted in center comes out clean. Cool completely before frosting.
