The Vegan Knife Pumpkin Waffles
Ingredients:
494 grams of The Vegan Knife’s vanilla donut mix
1/3 Cup pure pumpkin puree
1/2 Teaspoon cinnamon
1/4 Teaspoon nutmeg
3/4 Cup non-dairy milk (we prefer unsweetened coconut or almond milk)
2/3 Cup canola oil or coconut oil (melted)
1 Tablespoons vanilla extract
Directions:
- Spray non-stick cooking oil on waffle maker. Preheat waffle maker to medium high heat.
- In a large bowl, using a spatula, mix vanilla donut mix, cinnamon, nutmeg, and all the wet ingredients until well combined.
- Pour enough batter in the center of the waffle maker so it’s 3/4 of the way full. Close lid immediately. Follow manufacturer’s instructions to determine when the waffles are ready. Using tongs, remove the waffle carefully from the waffle maker when ready.
- Serve hot. Enjoy with your favorite toppings!
